San Jacopo is an agricultural estate the rises from the undulating Tuscan hills, close to the city of Florence, amid  rural scenery that is highlighted by its ancient stone walls that denote boundaries, quaint country roads that lead to farmhouses, geometric shaped vineyards and olive groves interspersed with Tuscany’s iconic cypress trees.  The property boasts 50 hectares of grounds where olive groves  and vineyards are cultivated to produce a prestigious extra virgin olive oil and an excellent Chianti wine in accordance with ancient agricultural traditions that have been passed down from generation to generation. The farmhouse is set out in the country, far from the noisy hustle and bustle of the city but at the same time within easy reach of famous historic towns such as Florence, Siena and Arezzo. The estate is personally run by Aldo Pasquini and family, who oversee the production of its local produce as well as managing the farm holiday estate. For this reason guests are able to come into contact with the real Tuscan culture of
farming and experience the “healthy Tuscan lifestyle”.

Olive Oil

One of the most appreciated of Tuscany’s products is the extra virgin olive oil produced from the finest olives grown in the hills surrounding Florence.  It is an intensely green oil with emerald tones, a full, fruity scent and flavour with a slightly bitter aftertaste. This characteristic but quite natural effect of making you want to clear your throat distinguishes this full- bodied oil from other lighter and sweeter oils. This oil can only be produced by following strict criteria. The origin, the micro-climate, the harvesting of the olives during the months of November and December and the immediate cold-pressing process all contribute to obtaining this superior quality sharp-scented olive oil.

The intense ruby red colour, the intoxicating aroma and the pleasing dry taste suggest that this wine is the result of meticulous processes consistent with the most ancient Tuscan traditions.
